Blue Cheese Salad

Ingredients

Preparation

Cut the Cantal or Gruyère cheese into little dice

Mix the Bleu d’Auvergne with the whipped cream

Season this mixture with brandy and pepper

Cover the Cantal or Gruyère with the creamy mixture

Chop up the almonds and cover the Salers cheese dices

Prepare a mustard sauce

Scope out the inside of the tomato

Fill with the Salers and pour over the mustard sauce

Serve with a well dressed green salad and a Jurançon wine
